I can give you the name of a great school, if that helps. My son is currently attending Paul Smith's College as a culinary arts student. Great choice for a career!
Take all the culinary and business courses your high school offers and learn Spanish or Portuguese.
Also you should get an after school job in a restaurant or hotel to get a feel for the work.
